Crispy Spicy Chickpeas are a great alternative to party peanuts. Your friends will be pleasantly surprised by the addition because they're addictively tasty but very healthy too.
The trick is to prepare them just before guests arrive so they're hot and crunchy when they walk in the door...yum!
The process is super simple:
Rinse and drain 2 cans of chickpeas (garbanzo beans).
Spread in an even layer on paper towels to dry.
Pour in a large mixing bowl and season with:
2 tablespoons olive oil
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon cayenne pepper
1/2 teaspoon sugar
kosher salt and pepper, 1 teaspoon each (more or less to taste)
Spread on a non-stick cookie sheet and bake at 400 degrees for 30-40 minutes. Allow to cool about 5 minutes and serve immediately. Enjoy!
